Day 09- Something you’re proud of in the past few days D

Let's see...something I'm proud of...that happened in the past few days... Man they like to make things hard. I'm kind of proud I got up this morning before the alarm went off. I'm proud I made a chocolate cream pie all by myself and the cream is expertly whipped by me:) I'm proud I didn't kill anyone while making said chocolate cream pie. I'm period I did the Thankful Challenge all through  November.

There must be something in the water, because I know I have gone crazy. (Finding the funny)

So I've gone crazy. I don't know when it started, but I realized it last night when I agreed to camp out with someone at Best Buy, Thanksgiving evening. Okay, maybe I started at the end of the story....but I am crazy so what do you expect.

So about a week ago when the daughter was sick with bronchitis, and I was sleep deprived because of taking care of said sick child. A good friend of mine called. He asked how I was doing, (buttering me up, I think), and the proceeded to the reason for his call. "Are you going Black Friday Shopping?" Now obviously, I hasn't gone crazy right at that moment, because I laughed at his question and said, "Nope". So then he asked me if I would be willing to help him out. Again not sure when the insanity started, but I'm guessing it is probably about this moment. So I told him I would call him Friday morning , and see where he was. Well Yesterday he called me, just to make sure I hadn't sought treatment for my mental illness, and to ask me if I was doing Thanksgiving with the Family. I told him yes, and then he told me, " Well after you leave there just proceed to Best Buy, I have a six person tent" This is the moment I should have stopped and thought the insanity through...but I didn't. You see I'm crazy, and crazy people don't think things through. So after eating a mind numbing amount of turkey, stuffing, mashed potatoes, green beans, and the occasional desert. I am dragging my butt to Best Buy, with my daughter in tow. Where will proceed to play board games and card games with my Friend, his girl friend, her children, and my child. While we are freezing our petunia's off.

Day 08- Short term goals for this month and why

Honestly I want to write in here every day. I want to put on a fabulous Christmas Party for my daughter's classroom. This is my first time as room parent, I'm a little frightened. I want to have a fabulous holiday season with no drama, and fun, and laughter. I want to finish a book I have been trying to read for the past two months. I want to read Park Service. I want to continue on my limited Soda journey so far I have had to cups of Dr Pepper in the last two months. Long list of short term goals I know, but there is a lot going on right now and it can be a little overwhelming.

So just because I can I am going to leave you with my favorite song right now. I know the live version sucks, but trust me amazing song=)


Brown Sugar Meatloaf

So this week was all about soul food for me. Comforting warm, yummy food for the heart and the belly... and I was going to make my Grandmother's recipe for meatloaf. I had it planned out, I bought the ingredients. I had the hamburger in the bowl...but when I was looking for the recipe in my homemade cookbook I made for myself, I found a recipe for brown sugar meat loaf. Now in this homemade cook book, are not just recipe I have already tried but, recipe I want to try. So since I have started this awesome adventure I thought, "What the Hay." So Brown Sugar Meatloaf it is.


Brown Sugar Meatloaf

1/2 cup Brown Sugar
1/2 cup Ketchup
1 lb Hamburger meat
1 tbs Worcestershire Sauce
3/4 cup Milk
2 Eggs
1 1/2 tsp Salt
1/2 tsp Pepper
1 tsp Onion Powder 
1/4 tsp Ginger
Quick Oats 


1. Mix Together Brown Sugar and Ketchup and spread on the bottom of the slow cooker.



2. Mix the rest of the ingredients together. Now this part is kind of tricky. The amount of Quick Oats depends on the consistency of the meat mixture. You don't want it to liquidy. It needs to be any a semi damp ball, and that is when you will know you have put enough. I think I probably put in about a cup.





4. Place Mixture over Brown Sugar Ketchup in Slow Cooker



3. Cook on Low 6 hours.


I turned it over because that is where the pretty brown sugar ketchup glazed side was...it was really god=)


Day 07- A picture of someone/something that has the biggest impact on you

Here it is my picture of the person who has had the biggest impact on me.  Without my favorite fourth grader... I might be going down the same destructive path I was going down when I got pregnant with her at 19. She is my person, my laughter, my love, and a light in a sometimes desperately dark tunnel I walk. She it's the smartest kid I know...but I might be a little biased:)




Slow Cooker Cheesy Mexican Chicken

Okay Now just as a reminder I am only cooking for two with minimal to no left overs because we don't eat left overs enough, and that just requires me to clean out yucky refrigerators at least once a week. Now on to the recipe.

Cheesy Mexican Chicken

Two Large Frozen Chicken Breasts (I buy chicken breasts frozen in a bag, so I can get out what I need.)

1 can (10-3/4 oz.) condensed cream of chicken soup

1 cup shredded Cheese

1/2 cup milk

1 Packet of Taco Seasoning Mix ( I happened to have the low sodium Old El Paso one so that is what I used.

1. Place the frozen chicken breasts in you slow cooker. (make sure your slow cooker is off because putting frozen meat in a hot slow cooker can make the insert crack.)


2. Put all other ingredients in a bowl and mix together.



Ignore what is in the background my kitchen is a mess.

3. Pour mixture over chicken.

4. I am cooking it on low for 8 hours.

I am going to serve it over rice. But you can serve this in taco's, use it as the filling for enchilada's whatever you desire.







Monday Meal Plans - First Time



Okay Since I said I wanted to go through my cooking journey as well as my life journey on this blog, Might as well start the cooking part now. Boy, am I starting on an easy week. On MPM, I've decided to only post dinners, because the daughter is in school most of the time, and I am working and usually jusdt make a quick sandwich for lunch. (FYI) Links will be put on the food items when I make them, so you can get the recipe. So here goes!!!

Day 6: Favorite Super Hero and why?

I think my favorite Super Hero is Batman. But not Michael Keaton, or Val Kilmer, or even George Clooney batman. But the new Batman, the christian bale batman. I like how Dark the newer movies are. I feel like the older movies made light of crazies that are Batman's enemies. I feel like if you are going to spin a tale of murder, crime, and intrigue...do it well. Joker want this jokester who just happened to be a criminal... He was a lunatic who knew nothing of insanity. Two face want just another ugly face, he was a white hat, who got screwed over one to many times. And Batman he isn't just a man whore vigilante.... He was a scared kid, who finally decided to face his fears...and fight back. And I am batman (batgirl) because somebody has to raise the next generation:)

Day 5: A picture of somewhere you've been.

As of today I have been to the bear building  workshop 4,321 times, and after all those times I finally have my very own bear. Mine is the one with the brownie uniform. The daughter's is a junior since she is a junior girl scout. I have to say out was fun. Pushing the fluff pump, brushing my bear's fur, and then putting her little brownie uniform on...fun, fun, fun....
And it made me realize, that kids get to have all the fun... They get to go to school instead of work, have the summer off...get way more presents on holidays and birthdays... Yep I'm the green eyed monster:)

Day 4: A habit you wish you didn't have.

Let's see....of all the habits I wish I didn't have.... The one I wish would go away the most is.... Biting My Nails. I've done it for as long a I can remember.
I stopped for awhile before my sixteenth birthday...my mom promised to take me to a nail salon if I did. Come to think of it, she never did take me for my manicure... Note to self: call the mother about said manicure. But I digress, hate this habit.... I want to have the strong long nails all the hot girls have... I don't mean the ones with the fake nails...because, I've had the fake nails before. And they suck after awhile.... So if anyone put there knows a good way to stop biting your nails.... I'm all ears...or fingers:)

Day 2: The Meaning Behind Your Blog Name

Well this one is pretty easy. As I mentioned in my first post.. I'm the pickiest of the pickiest eaters. I only like potatoes, grean beans, and peas in the vegetable aisle....and I don't really like any fruits. Thankfully the daughter is not picky at all, and will eat just about anything. So that takes care of the picky part...now on to the Texas part. I live in Texas, have all my life. Would love to live any where else... But sadly it is not happening anytime soon. Now, obviously you know the last part, I'm a proud Momma to the best fourth grader I know. So there you have it folks. no dramatic story...just simple, easy peasy, abra cadabra!!! So here is day 1.

Let's see a recent Picture of myself. I think I will pick this one.

This is Me ( I'm the blond headed one with the glasses) and my daughter's Girl Scout Leader. We were at a pumpkin patch with the daughter's troop and the photographer of the day said strike a pose. So being the hilarious people that we were we struck a pose alright. This picture makes me laugh every time I see it.

15 Interesting Facts

1. I am a potato lovin' fool. I love every way you can cook a potato; fried, mashed, and especially baked.

2. I am not a fan of sweet potatoes

3. I play video games. I am one of those fun Mom's who plays Mario with you and gets mad when you die=)

4. I have Curly hair, but I wish it was straight, I hate all my frizziness.

5. I am really good friends with my ex sister in laws. 

6. I go to church with All of Aylisa's Dad's family with the exception of baby daddy.

7. I have a major sweet tooth...which is bad for the healthier lifestyle I am trying to do.

8. I am so much like Lucy on I love Lucy....I come up with these "great" ideas.....but they aren't always so "great".

9. I am too trusting....and sometimes too forgiving

10. But at the same time make me mad enough and I will hold a grudge like you don't believe

11. I'm still working out my issues.... but I think I'm getting there

12. My favorite candy is Sour Patch Kids

13. I love the little sweet hearts you can get on valentines day, even though they taste like pepto.

Horrible No Good, Very Bad Afternoon...

So yesterday morning was good... Got alot done, even started a blog:). Went to the kitchen to make lunch for myself and half way through making it my electricity went out.. I was not amused.... So I grabbed my computer and went to my 2nd Momma's house. At this point I haven't eaten anything....by the time I got there I got a call saying I needed to be at a skype meeting in five minutes. So no time for lunch... I get in the meeting, and as soon as I get out I have to race to get my daughter.. I think now I will get something To eat finally...boy was I  wrong. So the daughter is doing her homework and I am trying to make something to eat. (yeah the power is back on) So I'm almost done when the daughter starts throwing up. So I leave my food, help her get cleaned up, and check her temp.... One hundred and freaking two... At this moment I decide a doctor's visit is in our very near future. Lucky for me, the doctor's office is open until 7 pm. 2 hours later we were at home with an anti biotic and a steroid...apparently her cold turned bad.  So at 7:30 pm  I ate for the first time all day...  It was a horrible, no good, very bad afternoon:(

The Only Thing To Do Is Start....and then the the thing to do after that is not quit...

So when writing the first words in this blog I can hear the hand gun starting pistol go off at the races. Starting has always been easy for me...its the finishing part that has already been tough. I'm always ready to start a new adventure and that is why I have so many unfinished adventures. So today I am determined to be stubborn. I want to document Our life in something besides a few quotes and cute pictures on my facebook page. I want to look back at all the recipes and be able to see an actual recipe with pictures and no I did that. I want to chronicle my to big for her own britches nine year old's journey into tweenhood and then teen hood. And be able to look at this as sort of a yearbook of sorts for our lives. So here we go....

Hello My name is Bethany, the people closest to me call me Beth, and their is one person that calls me Dani, but he is another story altogether. I am 29, a mother, single, chubby, loud, obnoxious, rebellious, and yes even a dork. I love to cook, love Music, Movies, T.V. shows, and life in general. I work from home as a VA (Or Virtual Assistant for all the laymen out there=) ) One more thing you need to know about is that though I love to cook, I am the pickiest person I know. I have texture issues. I don't like most Vegetables, or any fruit. So it has been quite a journey in my life, to find myself with quite a few things I really enjoy to eat that are semi healthy for me. Now things you don't really need to know about me but I will tell you anyways. I am Christian, but not in the vote for Romney, down with Obama kind of way. The goes to church, tries to be forgiving, raises her daughter in the way she should go kinda way. In saying this I will be the first to tell you, I am prone to acting out, being defiant, an a cuss word or two along the way. I am not perfect, that why I thank God everyday, that he his....

So what do I want this Blog to be about. Well really life in General. I want to write about my life, the Good, the bad, and even the ugly. I want to cook and make messes, and take pictures and have strangers that I don't know laugh at my ditzyness. I want to be able to go somewhere to vent, and know that I won't make anyone mad that I know. And the people that I do make mad I don't have to face on a daily basis. I want something to look back on to say...I did that....and maybe just maybe I want to continue this as a journey into getting to know me. Because you see at 29, I don't think I really know me. I think I know who my family wants me to be, who men want me to be, who my friends want me to be, even what my daughter wants me to be.. But I don't know me....and I think it would be pretty darn interesting to find out.... So who's with me.
